I would say air in system if thermostat was working ok before, when I used to do coolant change on my V6 as mention above there is a plastic bleed screw in the hose next to block. It's very simple to refill system on these engines I never had an issue. I did it a second time when I changed the thermostat, housing and plastic pip on top of block which is another common fail,point.
Your garage doesn't seem upto the job and I would take action if you manage to sort it your self.
